Sue Silvernail with plate honoring Otters Pond recipes

Otters Pond B&B, owned by Sue and Carl Silvernail, was selected by the University of Georgia to submit recipes for inclusion in the national menu awards competition among food services departments across the nation.

This March the University sponsored an event called “Sunset Breakfast—Dawn Inspired Dishes Served at Dusk” in which Otters Pond was featured in the Extraordinary Egg Entrees (Sweet Potato Hash with Poached Eggs and Smoked Salmon) and the Breakfast Treats category for Lemon Buttermilk Bread Pudding with Blackberry Sauce)……Northwest style for sure.

The extensive menu was served at dinner to over 8,300 participants. The focus of this event was to give attendees and students the dining experience of breakfast at Bed and Breakfast establishments from across the United States.

Susan Silvernail said,  “Our sweet potato recipe for twelve servings calls for about two pounds of sweet potatoes…theirs 3,500 lbs. and we use less than 1 lb of smoked salmon for 12 servings compared to 416 lbs needed for their event…wow! We were delighted to have an opportunity to promote the B&B industry!”
